Add 1 tbsp oil, diced onions, and diced peppers to a dutch oven or pot and cook for 3-4 minutes
Add ground chicken and taco seasoning and cook for 3-4 minutes
Add corn, rinsed black beans, rotel, green chiles, rinsed rice, and chicken broth
Cook for 15-20 minutes or until rice is fully cooked
Serve and enjoy, optionally topped with ¼ cup shredded cheese and ¼ cup greek yogurt
