Korean Lettuce Salad (sangchu Geotjeori)
  1. Wash and dry the lettuce well and cut each leaf into bite-sized pieces.

  2. Dressing: In a small bowl, mix together 2½ tablespoons soy sauce, 1 tablespoon rice wine vinegar, 2 to 3 teaspoons gochugaru, 2 teaspoons toasted sesame oil, 2 teaspoons sesame seeds, 1 teaspoon sugar, and 2 cloves garlic - minced. Taste and adjust the gochugaru, vinegar, and sugar to your preference.

  3. Toss: In a large bowl, toss the lettuce and carrots with the dressing and serve immediately. Enjoy!
