Heat oil. Add onion first and cook til soft, add in other fresh veggies (carrot, potato, celery)
Add broth, tomatoes, and seasonings.
Bring soup to boil and add softer or frozen veggies (green beans, spinach, zucchini) and parm rind
Simmer for at least 15 minutes but up to an hour
Before servings add beans and cooked pasta
serve with pesto and cheese
