Corned Beef Hash

  1. Peel and boil potatoes and mash them with a bit of pepper. Adjust quantities to suit number of guests (and your degree of gluttony).

  2. Mash tin of (low salt, if you prefer) corned beef (340g seems the standard size in UK supermarkets).

  3. Mix with potatoes and squash it down roughly into one or more pancakes about 1cm deep on a baking tray.

  4. Cook on gas mark 7 or 8 (220-230 Celsius) until golden brown and crispy. Don’t try to turn it over. Most likely it will fall apart.

As Jo Wallace suggests, you can tweak the basic recipe pretty much any way you like. Mr Shunt sometimes adds cabbage or fried onions.
