Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Caramelize the apples by roasting them with butter and maple syrup for about 25 minutes, until golden and soft.
Prepare the brie by trimming the top rind, spreading apple butter or fig preserves on top, and setting it on puff pastry.
Wrap the brie by folding the pastry over, sealing edges, brushing with egg, and sprinkling coarse sugar.
Bake for 20–25 minutes, until the pastry is golden brown.
Serve warm, topped with roasted apples and fresh thyme.
