Khoresht-e Bademjan
  1. Chop the onions and fry until soft in oil

  2. Add turmeric and tomato passata/puree

  3. Add potatoes and lamb shanks

  4. Add raisins and lamb cooking juices

  5. Add advieh spice mix

  6. Add oven-fried eggplants

  7. Remove a couple ladleful from the pot, including some potatoes, raisins and eggplants, and blend with cornstarch

  8. Add the blended mixture back into the pot

  9. Cut the meat into bite-sized pieces when cooked through
