Chop the onions and fry until soft in oil
Add turmeric and tomato passata/puree
Add potatoes and lamb shanks
Add raisins and lamb cooking juices
Add advieh spice mix
Add oven-fried eggplants
Remove a couple ladleful from the pot, including some potatoes, raisins and eggplants, and blend with cornstarch
Add the blended mixture back into the pot
Cut the meat into bite-sized pieces when cooked through
