Pulse walnuts to small pieces
Chop or grate mushrooms
Grate garlic
Fry mushrooms in olive oil for 6-7 minutes until softened and dry
Add garlic and tomato paste and cook for 2-3 minutes
Add walnuts, chopped tomatoes, sugar, bouillon and Marmite
Simmer for 10-15 minutes until thick and rich
Season to taste with salt and black pepper
Spoon over gnocchi or pasta and finish with nooch or plant-based parmesan
