Walnut-mushroom Ragù
  1. Pulse walnuts to small pieces

  2. Chop or grate mushrooms

  3. Grate garlic

  4. Fry mushrooms in olive oil for 6-7 minutes until softened and dry

  5. Add garlic and tomato paste and cook for 2-3 minutes

  6. Add walnuts, chopped tomatoes, sugar, bouillon and Marmite

  7. Simmer for 10-15 minutes until thick and rich

  8. Season to taste with salt and black pepper

  9. Spoon over gnocchi or pasta and finish with nooch or plant-based parmesan
