Chop potato into strips, add seasoning and air fry/bake on 400F for ~10-12 min or until golden and crispy.
Combine ingredients for pita and separate into 2 circles. Using a rolling pin, flatten it out as much as possible. Tip: flour the surface and spray the rolling pin with non stick spray.
Combine ingredients for tzatziki sauce.
Cube chicken then add yogurt and seasonings then cook on pan on high heat until internal temp is 165F.
Assemble gyros - in order add: pita, tzatziki, fries, chicken, toppings and more tzatziki.
