Caroline Chambers’ Stovetop Granola
  1. In your largest skillet over medium heat, toast the chopped nuts until lightly browned.

  2. Add the oats and continue toasting everything, stirring often, until the nuts and oats are golden brown.

  3. Then, add the butter, brown sugar, sea salt, and whatever warming spices you're into. Stir until the butter is totally absorbed and the oats don't look wet, another 4 minutes or so.

  4. Taste. Is it sweet enough? Add more sugar if needed! Turn off the heat.

  5. Stir the dried fruit into the granola.

  6. Let it cool completely, then serve. Store in an airtight container at room temperature for 2 weeks, or in the freezer for several months.
