In a mixing bowl, combine the flour, baking powder, salt, olive oil, and honey. Create a well in the centre.
Gradually pour in ¾ of the water, mixing continuously. Add more water only if necessary to form a cohesive dough.
Once the dough comes together and no longer sticks to the sides of the bowl, turn it out onto a floured surface. Knead for 5 minutes, then return it to the bowl. Cover with a clean tea towel and let it rest for 30 minutes.
After resting, divide the dough into 6 equal portions and roll them into tight balls.
Lightly oil your work surface. Roll out each ball until it's about the size of a small dinner plate.
Heat a cast-iron pan over high heat. Cook each flatbread for 2-3 minutes on each side, or until they're nicely browned and puffed up.
Remove the flatbreads from the pan and let them cool slightly before serving.
