Cranberry Goat Cheese Sweet Potato Bites
  1. Preheat oven to 425°F.

  2. Scrub the sweet potatoes and pat them dry. Do not peel them. Slice the potatoes into ½ inch thick coins and place on a baking sheet. Toss with olive oil, salt and pepper and spread them at least 1 inch apart.

  3. Bake at 425°F for 15-20 minutes. Flip them over and bake an additional 5-10 minutes until they are crispy on the outside and tender on the inside. Let the potatoes cool on the baking sheet for 5 minutes and then transfer to the cooling rack.

  4. Meanwhile, add the goat cheese to a small bowl and microwave for 15-20 seconds until it is softened. Add the fresh thyme leaves, Italian herbs, salt, pepper and the heavy cream. Whip until it is smooth.

  5. Once the sweet potatoes have cooled for about 10 minutes, top each sweet potato coin with a tablespoons of herbed goat cheese. Garnish with dried cranberries and additional thyme. Serve at room temperature.
