Place a deep pan over a medium heat with a little oil. Add the shallots, broccoli stalk and garlic and stir until softened
Stir in the beans (no need to drain), lemon zest and dark green parts of the broccoli. Stir until creamy, adding a little water as needed to stop the pan drying out
Turn off the heat and stir in lemon juice, Parmesan and season to taste. Spoon into bowls and top with a little olive oil and more parm
