In a small pot, cook quinoa in bone broth + seasonings, simmer on low heat for ~12 min. Let cool for 45 min- 1 hour (can also buy ready made quinoa)
Add all salad ingredients into a big bowl
Pour dressing into salad bowl + toss well
Adjust seasoning to taste
Place leftovers in a glass container + store in the refrigerator (it tastes even better the next day!
