Gf/df Mediterranean Chickpea Quinoa Salad
  1. In a small pot, cook quinoa in bone broth + seasonings, simmer on low heat for ~12 min. Let cool for 45 min- 1 hour (can also buy ready made quinoa)

  2. Add all salad ingredients into a big bowl

  3. Pour dressing into salad bowl + toss well

  4. Adjust seasoning to taste

  5. Place leftovers in a glass container + store in the refrigerator (it tastes even better the next day!
