Harissa tofu ciabatta
  1. Preheat the oven to 220°C/200°C fan/425°F/Gas mark 7 and line a baking tray (pan) with baking parchment.

  2. Slice the tofu into roughly 1cm (½ inch) thick slices, then score each piece in a criss-cross pattern on one side and transfer them to the prepared baking tray.

  3. Combine the harissa paste, maple syrup and oil in a bowl and pour it over the tofu pieces, then use a spoon to push the sauce into the crisscross incisions.

  4. Bake the tofu in the oven for 15 minutes, then flip the slices and spoon the sauce on the tray over the unbaked side. Bake for a further 20 minutes

  5. Slice open the ciabatta and add it to the oven for the last 6-9 minutes to toast.

  6. Meanwhile, prepare the lemon sauce by whisking together all the ingredients in a bowl.

  7. Spoon the lemon sauce on one side of the ciabatta, then top with the spinach, tofu and cucumber. Close and serve.
