Preheat your oven to 400 degrees. Butter your springform pan or spray it with oil, then set it aside.
Make the dough for the cheesecake crust: Beat butter and flour on high until combined, then add sugar and egg yolk and beat until soft.
Press the smaller ball of dough into the bottom of the springform pan and bake for 8 minutes.
Lower the oven temperature to 350 degrees.
Make the cheesecake filling: Beat sugar and cream cheese until smooth, then add egg yolks, sour cream, heavy cream, and vanilla.
In a separate bowl, beat egg whites until stiff peaks form, then fold into the cream cheese mixture.
Pour the filling into the prepared crust and bake for 45 minutes.
Let the cheesecake cool on the counter, then remove the outer ring of the springform pan and serve.
