Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper.
In a bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth. Add the almond flour, baking powder, cinnamon, nutmeg, and salt. Mix until fully combined.
Gently fold in the grated carrots and chopped nuts until evenly distributed.
Pour the batter into the prepared dish and smooth the top. Bake for 25–30 minutes, until the center is set and the top is lightly golden. A toothpick inserted should come out mostly clean.
Allow to cool for about 10 minutes before slicing. Enjoy warm or chilled.
