French Toast Suzette
  1. Whisk together the sugar, egg, vanilla. Once incorporated whisk in the milk, then the butter.

  2. Dip brioche in the batter and let sit for 10 minutes to absorb (Not in the batter)

  3. Fry bread on both sides in melted butter until nicely browned, remove from pan

  4. Using the same pan combine the melted butter and sugar. Cook while stirring until beginning to lightly caramelize. Add the zest and stir for 20 seconds.

  5. Add the orange juice, it may look like it's crystallizing but thats ok. Continue to cook while whisking until the sauce forms.

  6. Reduce until syrupy. Add the French toast and coat on both sides.

  7. Carefully add alcohol off the heat. Continue to cook until desired consistency.

  8. Serve with soft whipped vanilla cream.
