Zucchini Tater Tots
  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.

  2. Grate the zucchini, then squeeze it in a clean towel to remove as much liquid as possible.

  3. Place the dried zucchini in a bowl and add the egg, cheddar cheese, panko breadcrumbs, Italian seasoning, onion powder, salt, and pepper. Mix everything until well combined and sticky.

  4. Scoop about 1 tablespoon of the mixture and shape it into small oval tots. Repeat this process to make approximately 16 tots.

  5. Arrange them on the prepared baking sheet and bake for 25–30 minutes, flipping halfway through to ensure both sides get golden and crisp.

  6. Serve them warm with ketchup or your favorite dipping sauce.
