Spicy Zucchini
  1. Preheat the slow cooker, if necessary, or according to the manufacturer's directions.

  2. Place the zucchini, onion, garlic, and bell peppers in the slow cooker and season to taste with salt and cayenne pepper. Pour in the stock and mix well.

  3. Sprinkle the chopped tomatoes on top and dot with the butter. Cover and cook on high for 2½ hours until tender.
