Garlic-studded Pot Roast mains
  1. Season the pot roast with salt, pepper, garlic powder, and paprika. Cover and place it in the refrigerator overnight so the seasoning sinks deep into the meat.

  2. The next day, cut small slits all over the roast and stuff the 7 garlic cloves inside.

  3. Lightly coat the roast with flour. Heat oil in a pot or Dutch oven over medium-high heat and sear on all sides until deeply browned. Remove and set aside.

  4. In the same pot, add onions, carrots, and celery. Season with 1 tsp of each seasoning and stir.

  5. Add sweet potatoes and tomato paste. Cook, stirring, for about 3 minutes.

  6. Return the roast to the pot. Add the handful of garlic cloves, then pour in the red wine and beef stock.

  7. Cover and bake at 350°F (175°C) for 3½–4 hours, until fork-tender.

  8. Serve hot and enjoy.
