In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.
Pour the mix into an airtight container or a resealable bag. Label it, and keep it in your pantry for up to 3 months.
Preheat your oven to 400°F (200°C) and grease a cast-iron skillet or baking dish.
In a bowl, mix the cornbread mix with milk, eggs, and melted butter until just combined. Don’t overmix—it’s okay if there are a few lumps!
Pour the batter into your skillet or baking dish.
Bake for 15-20 minutes or until the top is golden and a toothpick comes out clean.
Let it cool slightly, then slice and enjoy!
