Preheat oven to 400°F and line a baking sheet with parchment paper.
Season cod fillets with salt and pepper, then place on the baking sheet.
Spread Boursin cheese evenly over the top of each cod fillet.
In a bowl, mix panko with melted butter and parsley.
Sprinkle the buttered breadcrumbs over the cheese layer.
Bake for 12-15 minutes until fish flakes easily and topping is golden brown.
Serve immediately with lemon wedges.
