Preheat oven to 400F.
Make the sauce by mixing the bone broth, olive oil, garlic, lemon juice, oregano, pinch of salt, and a few cracks of pepper. Whisk well and check for seasoning. You want the flavor to be quite lemony.
Peel and cut the potatoes in half, or in quarters if large. Arrange potatoes on a sheet tray and pour oven the sauce. Season the potatoes with a good pinch of salt, few cracks of pepper, another sprinkle of oregano, and mix well.
Cook in oven for 20 minutes, mix the potatoes and raise the heat to 425F. Cook another 20 minutes, mix, and then cook another 20 minutes. Mix again and raise the oven temperature to 450F.
Cook another 20-25 minutes, or until the potatoes are nicely borrowed all over. Enjoy!
