Wash lentils
Wash and dry leeks, cut into fine rings and sauté in a tablespoon of butter.
Deglaze with chicken stock,
Add washed red lentils and cook covered until they still have bite. This takes 7 - 12 minutes, depending on the age of the lentils.
Then stir in cream and mustard and bring to the boil briefly.
Season to taste with pepper, salt, a little lemon juice and a hint of sugar.
Serve sprinkled with parsley.
This is a delicious side dish for fish and poultry.
