Leek n lentils
  1. Wash lentils

  2. Wash and dry leeks, cut into fine rings and sauté in a tablespoon of butter.

  3. Deglaze with chicken stock,

  4. Add washed red lentils and cook covered until they still have bite. This takes 7 - 12 minutes, depending on the age of the lentils.

  5. Then stir in cream and mustard and bring to the boil briefly.

  6. Season to taste with pepper, salt, a little lemon juice and a hint of sugar.

  7. Serve sprinkled with parsley.

This is a delicious side dish for fish and poultry.
