Preheat oven to 200ºC degrees. Wash tomatoes and add to baking dish. Season with olive oil, salt, pepper and garlic. Mix together and bake for 25-28 minutes until tomatoes are roasted.
Combine all whipped feta ingredients in a food processor or blender. Mix together until smooth. Add to a bowl.
Combine all ingredients for sizzling shallot oil in a bowl. Heat oil in a saucepan of skillet. Once it’s heated – the oil should be shimmering, add to a bowl and mix ingredients together.
Add roasted tomatoes on top of whipped feta dip followed by sizzling shallot oil. Top with black pepper and a few crushed prune nuts. Serve with a toasted baguette and enjoy!
