Leif’s German Spaetzli
  1. In a mixing bowl, whisk together flour, eggs, milk, salt, and nutmeg until a smooth, thick batter forms.

  2. Bring a large pot of salted water to a gentle boil.

  3. Place a spaetzle maker or a colander with large holes over the pot and pour some of the batter onto it.

  4. Use a spatula to press the batter through the holes into the boiling water. The spaetzle will float to the surface when cooked, usually in 2-3 minutes.

  5. Remove the cooked spaetzle with a slotted spoon and transfer to a plate.

  6. Heat butter or oil in a skillet and add the cooked spaetzle, sautéing until they turn lightly golden.

  7. Serve your homemade German spaetzle hot with your choice of toppings.
