Mix soy milk, vanilla, and lemon juice to make vegan buttermilk. Rest 5 minutes.
Sift flour, baking powder, and salt into a bowl.
Add sugar, melted oil, and buttermilk to dry mix. Stir gently, leaving lumps.
Preheat waffle maker, grease lightly, and pour in ½ cup batter.
Cook until steam stops, then remove waffle.
Keep warm in oven at 200°F until ready to serve.
