Mix seasonings and eggs in a bowl, then scramble eggs in a pan until it's JUST cooked- remove and set aside.
Add in garlic and scallions to the pan and sauté until fragrant, about 2 minutes, then add in tomatoes. Let the tomatoes simmer until they break down, then add in seasonings.
Combine eggs and tomato sauce, top with slurry and stir to thicken and combine.
Enjoy with rice and butter :)
