Red Lentil Curry
  1. Heat up some oil in a large skillet or dutch oven. Sautè the onions until fragrant and slightly caramelized.

  2. Add the ginger & garlic and cook for 30 seconds.

  3. Add the spices, tomato paste and cook for another 30 seconds.

  4. Pour in the vegetable broth, crushed tomatoes and lentils. Reduce heat to low, add a lid and simmer on lowfor 20 minutes.

  5. Add the coconut milk & lime juice. Simmer on low for another 8 minutes.

  6. Serve and garnish with cilantro, soy yoghurt & chili flakes
