Ingredients:
Place the chicken thighs or breasts in the bottom of your slow cooker.
Add the drained white corn and black beans on top of the chicken.
Pour the Rotel (or ar of salsa) over the ingredients.
Sprinkle the chicken taco seasoning evenly across the mixture.
Add the diced onion, bell peppers
Cover and cook on low for about 6 hours, or until the chicken is tender and easily shredded.
Shred the chicken with a fork and mix it into the stew.
