Grate the cucumber and squeeze the water out using a cheesecloth or colander. Don't throw away the juice - drink it or use it for something else ☺️
Finely chop the mint.
Mix the soya yoghurt, the cucumber, fresh chopped mint, dry mint, juice of the limes, salt, pepper and garlic powder.
Adjust the salt to taste.
Garnish with crushed walnuts and rose petals.
Enjoy as a dip with bread or a side!
