Boil pork belly in ginger, green onion, salt and cooking wine for 30 mins then pat dry.
Sear pork belly on all sides until it's nice and crispy/charred then slice.
To make the dressing, add all the seasonings listed and then the noodles and give it a good mix.
Assemble the pork in a bowl with the noodles and serve with a side of lettuce + enjoy!
