Peel, cut and boil the potatoes until fork tender

Dip each croquette first in beaten egg then coat with breadcrumbs
Heat oil to 170-180°C (340-350°F)
Fry croquettes until golden brown
Mix mayonnaise, hot sauce, and garlic powder to make chili mayonnaise
Serve croquettes with chili mayonnaise
