Creamy Ginger Dressing

•2 cups mayonnaise

•1 tablespoon rice vinegar

•6 tablespoons grated fresh ginger

•6 tablespoon soy sauce

•7 tablespoons honey or maple syrup

•3 cloves garlic, minced

•1 teaspoon sesame oil

    •Salt and pepper to taste

  1. In a blender or bowl, combine the mayonnaise, rice vinegar, grated ginger, soy sauce, honey or maple syrup, minced garlic, and sesame oil (if using).

  2. Whisk the ingredients together until they are well combined. If the dressing is too thick, you can add water a little at a time until you reach your desired consistency.

  3. Taste the dressing and adjust the flavor with salt and pepper as needed. You can also adjust the sweetness or tanginess by adding more honey, vinegar, or ginger, according to your taste.

    5 Once the creamy ginger dressing is well-balanced and to your liking, transfer it to a container and refrigerate for at least 30 minutes to allow the flavors to meld together.

  4. Serve the creamy ginger dressing over salads, as a dipping sauce for sushi, or as a flavorful condiment for grilled chicken or vegetables.

    Some notes:

*I don’t add salt and pepper because the soy sauce and mayonnaise tend to add enough salt, and the ginger adds enough spice, but feel free to add to taste.
