Perfect Sushi Rice
  1. Heat rice vinegar with sugar & salt in a small pot until fully dissolved.

  2. Cook sushi rice with water in a thick bottom pot or rice cooker.

  3. Transfer rice to a wooden or plastic bowl once cooked, do not cover.

  4. Pour seasoning evenly over rice & mix with a wooden spoon in a cutting motion.

  5. Let rice cool down to room temperature by a window or using a fan, but never in the refrigerator.
