Mix 1 cup warm water, 1 tablespoon yeast, and 1 tablespoon sugar. Let it sit for 10 minutes.
Add 3 cups flour, 3 tablespoons olive oil, 1 teaspoon salt, and the yeast mixture. Knead for about 10 minutes until you have a nice, smooth dough ball.
Place dough in a greased bowl, cover, and rest for one hour.
Cut the mozzarella into 12 pieces.
Divide the dough into 12 equal pieces. Roll each piece out and tie it into a knot.
Create a pocket at the bottom of each knot, insert a piece of cheese, and pinch the edges together to seal.
Rest the knots for 30 minutes.
Bake at 400°F for 15 minutes.
While baking, melt 4 tablespoons butter and mix with 3 minced garlic cloves, fresh parsley, salt, and pepper.
Remove knots from oven and brush with garlic butter mixture.
