Prepare the Honey Base:
Drizzle honey in small circles across a lined baking sheet where each pastry will sit.
Add Peaches:
Place peach slices on top of each honey circle and drizzle with more honey. Sprinkle with cinnamon if desired.
Top with Pastry:
Place a small rectangle of puff pastry over each peach pile.
