Make a slit along the back of each shrimp, then gently flatten
Place one piece of rice paper down
Add flattened shrimp on top, with the tail pointing toward a corner
Lightly wet the edges with a little water
Place another rice paper piece on top and press to seal
Deep fry until shrimp is cooked through and lightly golden
Sprinkle with taco seasoning while hot
Mash avocados, then mix in remaining ingredients for guacamole
Serve rice paper shrimp chips together with guacamole
