CILANTRO-LIME RICE
  1. Place rinsed rice, water, and 1 teaspoon salt in a large saucepan and bring to a boil on medium-high heat.

  2. Once the water comes to a rolling boil, stir once, reduce the heat to low/simmer, cover with a lid, and cook for 20 minutes.

  3. After 20 minutes, turn off the heat completely and allow the rice to sit, covered, for an additional 10 minutes.

  4. Transfer cooked rice to a mixing bowl. Add cilantro, lime juice, and a generous pinch of salt. Mix until well combined.
