Place rinsed rice, water, and 1 teaspoon salt in a large saucepan and bring to a boil on medium-high heat.
Once the water comes to a rolling boil, stir once, reduce the heat to low/simmer, cover with a lid, and cook for 20 minutes.
After 20 minutes, turn off the heat completely and allow the rice to sit, covered, for an additional 10 minutes.
Transfer cooked rice to a mixing bowl. Add cilantro, lime juice, and a generous pinch of salt. Mix until well combined.
