Cook the rice: Rinse rice, boil water, add rice into water, bring back to a boil, reduce heat and maintain a simmer, cook until water is absorbed (about 15-18 minutes).
If adding protein, prepare your chicken: In a bowl, toss olive oil, garlic powder, onion powder, paprika, salt and pepper. In a pan, sauté your chicken on medium-high heat until cooked (about 5 minutes on each side). Once cooked, set aside.
In another pan, sauté mushrooms with olive oil for 5 minutes. Add minced garlic and stir. Add fresh spinach and cook for 1 additional minute.
Add in your cooked rice and vegan butter, stir until warmed. Add salt & pepper to taste. Cut up chicken and add it in. Mix it all together and enjoy!
For the side salad: Wash and chop the lettuce, tomato, and cucumber. Add to bowl, drizzle simple salad dressing and toss to combine. Enjoy!
