Preheat your oven to 170°C (fan-assisted) and line a baking tray with parchment paper.
In a large mixing bowl, combine all batter ingredients (except breadcrumbs and cauliflower) and whisk until smooth and lump-free.
Add the cauliflower florets to the bowl and toss until they are evenly coated with the batter.
Sprinkle the breadcrumbs over the coated cauliflower and mix thoroughly, ensuring every floret is evenly coated.
Arrange the cauliflower florets in a single layer on the lined baking tray. Bake for 25–28 minutes, turning them halfway through, until golden and crispy.
While the cauliflower bakes, prepare the sauce. In a separate bowl, whisk together all the sauce ingredients until smooth and well combined.
Once the cauliflower is crispy and golden, transfer it to the bowl with the sauce. Gently toss until all florets are well coated.
Place the saucy cauliflower on a serving plate.
Sprinkle sliced spring onions and sesame seeds over the top.
