Preheat oven to 220C and place pan inside to heat
Mix wet ingredients together (creamed corn, eggs, melted butter)
Mix dry ingredients together (polenta, flour, caster sugar, baking powder, salt)
Combine wet and dry ingredients, being careful not to overwork the batter
Remove hot pan from oven and coat with a knob of butter
Pour batter into hot pan
Return to oven and reduce temperature to 180C
Bake for 30 minutes or until golden and set
Serve immediately
