Using a food processor, finely chop up your veggies so they're all around the same size.
Sautee in a nonstick pan until it loses some of that moisture.
Mix with equal parts rice and veggies/protein, some soy sauce, sesame oil, and other seasonings as desired.
Place a thin layer on ½ the nori, then fold over into a patty shape. Cut into 1-2 inch slices if desired.
Heat a nonstick pan over medium heat. Beat eggs together. Dip the gimbap into the eggs and add straight to the pan to fry, both sides. Serve while hot with a dumpling dip or just soy sauce, or a mayo dip.
