In a saucepan, combine one and a half cups of heavy whipping cream with a quarter cup of powdered monk fruit sweetener and a quarter cup of granulated sugar replacement.
Add two tablespoons of softened butter to the mixture and stir well to ensure all ingredients are combined.
Heat the mixture over medium heat until it reaches a boil, then reduce the heat to low.
Stir in about an eighth of a teaspoon of xanthan gum and mix until it is fully dissolved.
Let the mixture simmer on low heat for 20 to 30 minutes, stirring occasionally to avoid scorching.
Once simmered, remove the saucepan from heat and pour the mixture into a pint jar.
Allow the mixture to cool; it will continue to thicken as it chills in the refrigerator.
