Pat chicken dry and season with salt, pepper, and Italian seasoning.
Heat olive oil in a large oven-safe skillet over medium heat. Sear chicken 3–4 minutes per side until golden.
In a blender, combine cottage cheese, Parmesan, and garlic. Blend until smooth.
Lower heat and pour the sauce over the chicken. Simmer uncovered 10–12 minutes.
Transfer skillet to oven and broil 2–3 minutes until golden and bubbly.
Rest 5 minutes, garnish with parsley, and serve hot.
