Fruit Cake
  1. Preheat oven to 350°F.

  2. Butter and sugar an 8-inch square pan (or a 9-inch cake pan).

  3. Cream the butter and 1 cup sugar for 3 minutes until light and fluffy.

  4. Add eggs and mix until combined.

  5. Add flour and baking powder.

  6. Beat on high for 2 to 3 minutes. The batter will be very thick.

  7. Spread batter into the prepared pan.

  8. Top evenly with fruit and sprinkle with 1 tablespoon coarse sugar.

  9. Bake for 50 to 60 minutes until golden brown on top.

  10. Let cool for 10 minutes, then run a knife around the edges and remove from the pan.
