Mix dry ingredients together:

Cover with tea towel for 30 minutes.
After 30 minutes, wet your fingers, then fold 4 sides, twice, so 8 times in total, turning the bowl after each fold as shown in the reel.
Cover and Rest for 45 minutes.
Add some greaseproof paper to a large oven dish with some olive oil. (I normally grease the bottom with butter so the paper doesn’t move around.)
After 45 minutes, oil your utensils, hands, and the work surface. Don’t skip this step; it’s important as the dough is sticky
Pour the dough out and cut into 6, fold each piece 4 times turn over and then shape into a ball
Add to the oven dish, cover and rest for another 45 minutes to rise
preheat your oven to 220°C.
After 45 minutes, oil your hands again, dimple your dough as shown in the the reel, top with more olive oil and bake for 22–25 minutes.
Once cooked, take out of the dish and cool down on a wire rack
