In a large saucepan or skillet, combine butter, heavy cream, salt and pepper.
Cook over medium heat, whisking constantly, until butter is melted.
Stir in 1 ½ cups grated Parmesan. Cook until cheese is completely melted; remove from heat.
Add an additional ½ cup grated Parmesan OR enough to reach desired consistency.
Season with additional salt and pepper to taste.
