Sichuan Chicken & Cucumber Salad
  1. Poach chicken with all components

  2. Bring up to just about boiling, turn the heat down and let simmer for 10-12 minutes

  3. Slice cucumber on a mandolin, place in a bowl, add some salt and mix gently

  4. Slice green onion and place in ice water to make them curl

  5. Take out chicken, let it cool down until you are able to shred the chicken

  6. Strain excess liquid from cucumbers

  7. In a bowl add all ingredients and mix

  8. Serve with chili oil, sesame seeds & green onion curls
