Grab a blender or food processor.
Add three large eggs
Add ¾ cup of maple syrup.
Add half a cup of oil.
Add a half a cup of coffee (or milk/alternative milk).
Mix for less than 30 seconds.
Add ¼ cup of unsweetened cacao.
Add 1 and ½ cups of self-rising flour (or all-purpose flour with 1 tsp baking powder).
Add a dash of salt (optional).
Pulse only two times to avoid a dense cake.
If needed, use a rubber spatula for a gentle mix.
Spray a baking pan.
Pour the batter into the pan.
Add chocolate chips on top (optional).
Bake in a preheated oven at 350° F.
While the cake bakes, prepare chocolate sauce: combine 1 cup of chocolate chips and 1 tsp of coconut oil in a microwave-safe bowl.
Microwave in 30-second increments, stirring well between each, until melted.
Bake for 25 minutes, or until a toothpick test comes out clean.
While the cake is still warm, top each square with coconut flakes (optional).
